Cloud recordings stay in your account; anything that only ever lived on this computer does not.
Removing the Rekorder extension from Chrome doesn't touch your account. Recordings that have finished uploading stay in your account and on the website. Anything that only ever existed on this computer, such as Offline mode recordings, is deleted with the extension.

Uninstalling doesn't delete your account and doesn't cancel a paid plan. To do either, see Cancel a subscription, and what you keep and Delete your account and everything in it.
If the icon isn't pinned, click the puzzle-piece icon next to the address bar and open the menu beside Rekorder. Other Chromium-based browsers, such as Edge or Brave, work the same way.
Add Rekorder again from the Chrome Web Store, as described in Install Rekorder and pin it to your toolbar. Then sign in from the extension popup. Your cloud recordings are waiting in your library. See Sign in from the extension popup.
The new install starts empty. Recordings that were only on this computer before don't come back, and you'll need to set your recording defaults again.
